  • 2 teaspoons mustard
  • Juice of 1 lemon

This is a special sauce for boiled or cold roasted meat or boiled veal tongue.
Wash and chop celery finely; peel and chop carrots. Put vegetables in a little bowl together with mustard. Dress with olive oil and lemon juice; season to taste with salt and pepper, if you like. Let it rest for almost an hour. Before serving, add peas, boiled and well drained, and mayonnaise.
