Authentic Italian recipe -
(Low fat mashed potatoes - Our recipe)

Time: preparation: 20 minutes
........ cooking: 50-60 minutes

1 Kg (2 1/4 lb) potatoes
150 ml (5 fl oz - 3/4 C) low fat yogurt
250 ml (8 fl oz - 1C) skimmed milk
2 tablespoons dried chives
Salt

Authentic Italian recipe -

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

This is our light version of one of the most traditional recipe in the world. Many people like mashed potatoes but a great number can't eat this dish for the fat. We suggest a light recipe because we use yogurt instead of butter. The dish is good! Why don't you taste it?
Steam potatoes; when they are cooked, peel and purée them with a vegetable mill.
Put mashed potatoes together with yogurt, milk and chives in a saucepan. Season to taste with salt and cook over a gentle heat for few minutes, stirring continuously, until mashed potatoes are well retired.
If necessary, add other milk.
