boiled and marinated beef
(Boiled & marinated beef - Traditional recipe)

Time: preparation: 10 minutes plus

serves 4

800 g (1 3/4 lb) cold boiled beef
2 glasses of vinegar
1 glass of white wine
2 tablespoons dried rosemary
2 teaspoons dried bay leaves
1 onion, sliced
4 tablespoons extra virgin olive oil

  Spoon measures are American spoons, that is standard cook's measuring spoons used in USA.
  The best plan is to regard 2 American teaspoons or tablespoons as 1 English teaspoon or tablespoon (eating spoons)

Prepare the marinade. Let the onion fry lightly in the olive oil in a pan over a low heat (don't let it brown). Then add the aromatic herbs and pour in the vinegar. Let the vinegar boil very slowly until it is half reduced. At this point add the wine and half a glass of water. Boil for few minutes.
Meanwhile take away your meat from the fridge, cut it into thin slices and arrange them on the bottom of a large bowl.
When the marinade is ready, pour it into the bowl in order to cover the meat slices. Let all cool and then chill for several hours until serving. Remember to take away from the fridge at least 30 minutes before serving.

Note

  • - You can serve this dish as a second course in summer dinner party accompanied with boiled potatoes or string beans or a salad; but you can also serve it in a buffet or as an appetizer (this is a traditional Italian appetizer!).
  • - This is a do-ahead dish.
  • - It's a good idea for using boiled meat left.
