
Prepare a dose of rich shortcrust pastry for salt preparations. The dose is enough for about 30 cookies. Allow the dough to rest for about half an hour in a cool place.
Preheat oven to 180 °C (350 °F). Meanwhile butter a baking tin or dish. Roll your shortcrust pastry out to a thickness of 1/2in on a lightly floured surface. Using different pastry cutter or a sharp knife, cut out decorative shape, such as hearts, squares, triangles, leaves. Arrange the salt cookies on the baking tin and bake for about 15 minutes. Let them cool and then you can garnish them. You can also prepare them the day before.
Mix the soft cheese with 30 g (1 oz) walnuts, finely chopped, and chives. You can also add paprika powder to this mixture, if you like. Spread this mixture on all the salt cookies.
Cut into little pieces the slices of salami, peppers, mushrooms and little artichokes. Half the remaining walnuts. Garnish the cookies with these ingredients. Arrange them on a serving dish. They are ready to serve.
You can accompany a cocktail with them or you can serve in a buffet. They are delicious even with tea.
You can obtain a lighter recipe if you prepare the rich shortcrust pastry with 2 tablespoons olive oil instead of unsalted butter. In this case calories are 335 and fat become 20 g per serving.
