parmesan ice-cream - italian appetizers
(Parmesan ice-cream - Traditional recipe)  


ingredients - serves 4
  • 300 g (10 1/2 oz) grated Parmesan cheese
  • 500 ml (16 fl oz - 2 cups) single cream
  • Freshly ground black pepper
  • Salt
  • Time:
    45 minutes plus cooling time

In a saucepan put cheese, salt and pepper. Add cream, stirring with a wooden spoon. Cook the mixture in bain-marie, whipping with a whisk continuously, until well fluffy.
Remove from the heat and pass the mixture through a sieve.
Put in the ice-cream freezer and follow the instructions to do an ice-cream.
